When you think of Chinese food in the U.S., fried rice, or General Tso's chicken may first come to mind. But a new museum exhibition in New York City is trying to expand visitors' palates (味蕾). It features stories of famous cooks like Martin Yan and home cooks whose food represents18 different regional cooking styles of China.
"I think it's unfair to just classify Chinese cooking as one," says Kian Lam Kho, a co- curator (策展人) of "Sour, Sweet, Bitter, Spicy: Stories of Chinese Food and Identity in America" at the Museum of Chinese in America. "Even with the same dish or same cuisine, every family has a different variation." That’s why the curators say if you want to taste the full range of Chinese cuisine in the U.S, you'll need to go beyond restaurants and into home kitchens, which can play a central role in many immigrants' lives.
"The kitchen itself is kind of a comfort when you come to a new country. That's the one place where you set up as your home base, and you cook things that you remember from your past," explains co-curator Audra Ang.
One of the home cooks showcased in the exhibition is Ni Biying, 80, of Manhattan. She worked as a live-in babysitter for years before she could finally afford to rent a home with her own kitchen. These days, you can usually find her moving around her one-bedroom apartment as a sweet smell of vinegar and rice wine floats from her stove. For Ni, a small dinner for friends and family means preparing almost a dozen different dishes. She learned some of her techniques from her father, who made most of her family’s meals when she was a child. "I still make the beef with stir-fried celery my father used to cook," she says. And it's the kind of comfort food that defines Chinese food for Ni.

Chinese students always complain that they’re under great pressure and don’t get enough sleep. But they may be surprised to learn that they’re much luckier than their peers in South Korea and Japan, according to a recently published report, conducted by Shanghai Academy of Social Sciences on the physical and mental health of senior high school students in the three Asian countries.
According to the study among nearly 6,000 high school students in the three countries, Chinese students are the tallest but poorest in physical fitness. Chinese students are on average 168.17cm, compared with 167.61cm for South Korean students and 164.70cm for Japanese students. Chinese students asked for sick leave more than students in other countries. About 72 percent of Korean students never asked for sick and injury leave during high school, compared to 53 percent for Japanese students and 45 percent for Chinese students. Moreover, Chinese students drink alcohol and smoke earlier than Korean and Japanese students. Around 70 percent of Chinese students have drunk alcohol, compared to 50 percent for Korean and Japanese students.
According to the survey, Japanese and South Korean students suffer more pressure than their Chinese peers. Statistics show 16 percent of students in China said they experienced mental pressure often over the past year, while the numbers in Japan and South Korea were 33 percent and 47 percent respectively. Their worries come from “study”, “future after graduation”, “friendships” and “relationship with their parents”. To go with stress, 57.9 percent of Korean students sleep the least, less than six hours a day, compared with 46.6 percent of Japanese students and 30 percent of Chinese students.
More Chinese students were satisfied with their physical appearance, double that of students in the survey from Japan and South Korea. The report said that over half of students in South Korea had tried to lose weight in the past year, while in China the figure was only 22 percent. In measures of self-worth, such as “I think I am valuable” and “I think I am successful”, “I can complete many things”, “I won’t give up to failure,” Chinese students showed greater self-confidence than students in Japan and South Korea.

Promising 42,000 new homes across five residential districts, the eco-town of Tengah will be the 24th new settlement built by Singapore’s government since World War II. It is, however, the first with centralized cooling, automated trash collection and a car-free town center, which conservationists hope offers a road map for slashing(大幅度削减)carbon emissions in the Southeast Asian city-state.
Although comparatively small, with a population of under 6 million people, Singapore’s per capita emissions are higher than those of the UK, China and neighboring Malaysia, according to the country’s National Climate Change Secretariat. That’s due, in part, to air conditioning, which accounts for more than a third of typical household energy consumption. Global warming will only exacerbate(使加剧)this dependence. The Meteorological Service Singapore (MSS) has predicted that, by the end of this century, average daily temperatures in the city-state may be at least 34.1 degrees Celsius “almost every day” during the eight warmest months of the year.
As such, keeping cool will, increasingly, be a necessity for residents. Rather than demonizing(妖魔化)air conditioning, Tengah’s planners have instead sought to reimagine it. Cold water, chilled(冷的) ,using solar power, will be piped through the district’s homes, meaning residents don’t need to install inefficient outdoor AC condensers. According to the town’s energy provider, SP Group, this will generate carbon dioxide savings equivalent to taking 4,500 cars off the roads each year.
Planners used computer modeling to simulate(模仿) wind flow and heat gain across the town, helping to reduce the so-called urban heat island effect. Elsewhere, “smart” lights will switch off when public spaces are unoccupied, and trash will be stored centrally, with monitors detecting when garbage needs collecting. All residents will have access to the app allowing them to monitor their energy and water usage. Digital displays in each block will meanwhile inform occupants of their collective environmental impact, which could even encourage competition between residential blocks.
Regardless of whether the use of smart technology can significantly reduce greenhouse gas emissions or not, engaging residents with their own consumption could encourage behavioral change, according to Perrine Hamel, an assistant professor at Nanyang Technological University’s Asian School of the Environment. “Changing behavior is going to be an integral(必须的) part of achieving climate targets and, of course, urban design is the first way to affect and change behavior,” she said.
